Characteristics of Wild Chicory:
- Origin: Common plant on roadsides and in wastelands.
- Appearance: Shape of modest rosettes of very bitter leaves.
- Flowering: From May to September (even October), its tall stems bear a multitude of superb blue flowers.
- Cultivation: The plants are pulled up at the onset of winter to be cultivated in a warm place, protected from light. Thus blanched, the leaves lose some of their bitter flavor.

- Exposure: Prefers sunny locations.
- Planting season: Spring.
- Harvest: The leaves can be harvested as soon as they are sufficiently developed.
